Soon after Pam Proto moved from Boston to Boulder Colorado she was homesick for traditional thin crust, bubbly and charred pizza. Realizing that if she wanted the flavors and smells she so missed from the pizzerias back east, she would have to do it herself. With the help of family and friends the first Proto’s Pizza was born November 1999 in Longmont, Colorado.
Not long after the doors opened, Proto’s Pizza was being recognized in many publications including Bon Appetit magazine. The Pizza experience had been elevated to table service, linen napkins, and delicious wines with a full bar to make it a true dining experience.
Proto’s has been tossing pizza for a long time now. Pam has gone on to open several more locations. No matter which Proto’s you choose as your favorite, one thing will never change, and that is their passion to create and bake for you the best pizza you will ever eat.
Proto’s does not deliver, but all items are available for take-out. If you’d like, we’ll cook your pie only half way and keep it un-cut. When you get home, simply throw it in your pre-heated 500 degree oven on a stone or sheet and wait 3-4 minutes. Watch it though!!! They cook fast, even at home.

Protos Longmont. Opened 1999. This was the first Protos. It holds a special place in my heart. It’s where we created all of our recipes. It has loyal pizza eaters and continues to win ‘Best Pizza’ accolades every year. Our general manager Tammy has been with Protos since we opened our doors.

Protos Lafayette. Opened 2000. Sitting about ten miles away from the Longmont Protos this location has held its own in an area that seems to have pizzerias on every corner. Protos Lafayette has won the ‘Best of the West’ distinction for many years. It’s a smaller space inside, but they have a beautiful outdoor patio and bar area.

Protos Denver. Opened 2001. In the heart of the Platte Street area of Denver the oven is hot all day in this location. Situated inside a beautiful turn of the century building, it’s a perfect meeting place before a baseball or football game. Protos Denver has won ‘Best Pizza ‘and ‘Best Cannoli’ by the major city publications regularly over the years.

Protos Boulder. Opened 2005. I love the city of Boulder and I love this Protos. It’s a beautiful space inside and out. On any Friday by 5pm it’s filled with parents and their young children who love to watch the bakers toss the pizza dough in the air. Later in the evening the older crowds stop in for their pizza fix and some good drinks.

Protos Broomfield. Opened 2009. With an incredible view of the Rocky mountains from the patio area this store has a staff that loves to be busy. It’s sits just a block from the First Bank Event Center, so on concert nights the place is hopping . The bakers make beautiful pizzas and the servers have a thorough knowledge of the large beer selection.

Since we know you’re a pizza eatin’, vino drinkin’, Proto’s devotee, we want you to know about our monthly wine events. Every month, each Proto’s location “does” casual wine tastings for $15-$25 a person.
The tasting may focus on a particular country, region, varietal or some particular hair-brained notion we feel we need to address. We’re in charge and we’re funny like that. Guaranteed to you is a flight of five cool, interesting wines and the presence of our “wine-y” staff.
Servers at Proto’s are endowed with huge, cascading fonts of wine-oriented knowledge which will wash all over you and your dining experience. Towels will be provided. And wait! That ain’t all! Our pizza makin’ cognoscenti will rattle their collective brain and create a special pizza geared just towards that night’s festivities!
